Leave the Country

The beginning of 2020 started out pretty decent. No Covid yet, a trip to the Dominican Republic, experiencing going through customs (that was very anticlimactic lol). I practices quite a bit of Spanish in the Dominican and was happy to get some pointers and do pretty decent as well. 

Leaving the country brought quite a few new experiences. I’m sure you will be able to review them as I get them all posted. 

Things certainly work differently in different countries. Granted – I’ve not been to a plethora of countries to compare it to anything. On arrival to the DR, we exited the plane on stairs. Walk down, jump on a bus that takes you to customs. (If you can call it that)

At Customs, you go through a line, they stamp your passport, and off you go. Its possible there were a couple questions, but I don’t recall anything standing out that made any of it very secure. Some people got checked, other people got waved through.

It was a bit different coming back. Landing in the US, we go through customs, run all over the back side of the airport (at least that’s what it felt like). Stand in line with a bunch of people coming into the country from all over. I particularly loved how closely everyone seemed to get packed in line. Coughing all over everyone. This annoyed me already – before Covid.

Some people had to go in one type of line, and others were shuffled over to another line. Slightly disconcerting when you are traveling with someone and aren’t used to airport anything. 

Clearly – I made it just fine. ☺

I can also mark off eating airplane food. I don’t recommend it.  It wasn’t horrible. But I can’t imagine its all that healthy.  Okay….. Do it once! – Get it off your bucket list of something you didn’t realize was on your bucket list.  Then… don’t do it again!

Try Canelé

 A couple of ladies selling French food. Fresh Baguettes, Canelé, and other delicious items. The old man and I gave a shrug and dove in! Canelé looked amazing. Fresh bread? who can say no to fresh bread?

Those canelé though. If I could commission her to make those for the rest of my life, I’m certain I would. Toes be damned! Diabetic or not – those things were AMAZING.

They are sweet, but almost caramelized sugar with a delicious wax on them. Edible wax – ya goofball. Like Beeswax. 

A proper description: A canelé is a small French pastry flavored with rum and vanilla with a soft and tender custard center and a dark, thick caramelized crust. It takes the shape of a small, striated cylinder up to five centimeters in height with a depression at the top

Once we found these we stopped frequently and kept getting more and more. Probably not a good idea, but- they really are hard to resist.

If you are asking yourself “Well how was this on your bucket list if you didn’t even know they existed?” You forget – EVERYTHING is on my bucket list. If I haven’t tried it. Its on it. Whether I have the guts to do it or not is a whole other story!

Gyro Meat and Tzatziki Sauce

I have never cooked lamb before and I absolutely love gyro’s. I know that the carbs in Gyro’s can

very since some people add flours to the mix when they make the loaf. My husband and I decided to give it a go and make our own. We are very happy that we did.

We seen so many different recipes we decided to go with an easier one. But if anyone has any other tips tricks or otherwise, we are always all ears. As I’m sure you can all tell, we like to try new things.

The recipe we followed is below though we doubled it since we had 2 lbs of lamb. To help reduce carbs we only used 1 medium onion instead of doubling it. Everything else we doubled.

Lamb Meat – Gyro Meat

Ingredients:

  • 1 medium onion, finely chopped or shredded and drained (See directions)
  • 1 pound ground lamb
  • 1 tablespoon finely minced garlic
  • 1 tablespoon dried marjoram
  • 1 tablespoon dried ground rosemary
  • 2 teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper

Directions:

  1. Preheat the oven to 325 degrees F.
  2. Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.
  3. Return the onion to the food processor and add the lamb, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.
  4. Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F.
  5. Slice and serve.

Note: Using a carving knife to cut the meat works great. Just like the shaved meat from a Greek restaurant!  

I would also recommend grilling the meet after its been shaved. it will improve the taste a bit and of course look tastier!

Tzatziki Sauce

Ingredients:

  • 1 cup full-fat plain Greek yogurt
  • 1 teaspoon garlic powder
  • 1 tablespoon white vinegar
  • 2 tablespoons olive oil
  • 2.5 ounces (¼ whole) cucumber, seeded and grated
  • 2 tablespoons minced fresh dill (or 2 tsp dry)
  • salt and pepper to taste

Directions: 

  1. Squeeze liquids out of the cucumbers. Discard the liquid and place grated cucumber into bowl.
  2. Add remaining ingredients and stir well. 
  3. Refrigerate for at least 45 min. The taste will improve as it sits.

Coconut Crusted Fish

I say fish instead of listing Cod, Haddock, Tilapia or any other because we all have our budgets and fish is good cooked many different ways.  Granted I stick with my white fish. I got this recipe from a co-worker and it was awesome. But a word of caution: All of the amounts are estimated. I was given a list of items to use without measurements and just put together what looked right. So the description below is more of a guideline.

Ingredients:

  • Juice from 2 fresh limes
  • 1/4 cup olive oil   (Oil should be equal to the amount of juice you get from the lemon)
  • 8 oz tilapia or other white fish (we used Cod)
  • Salt and Pepper
  • 1/2 cup Panko-bread crumbs
  • Shredded Coconut  (I used unsweetened)
  • 1/2 cup Almonds (Chopped) ( I used Pecans which added too much ‘sweet’ likely will try cashews or walnuts next time)
  • Cayenne Pepper – don’t hold back

Directions: 

  1. Preheat oven to 450 degrees
  2. Pour fresh lime juice and olive oil into a baking pan
  3. Place tilapia in pan, coat both sides in juice
  4. Sprinkle salt and Pepper on fish. 
  5. Sprinkle panko bread crumbs on to fish
  6. Sprinkle coconut on top of fish
  7. Sprinkle almonds (Can use pecans, walnuts or other kind of nut)
  8. Season with cayenne pepper. (More the better  )
  9. Bake approximately 8-20 minutes. Time depends on the size of the fillet. 
  10. Smaller Fillets 8-12 minutes
  11. Larger Fillets 15-20 minutes

Recipe makes approx 4 – servings.

Old Timey Photo

I have wanted to do one of these pictures for quite a long time. I have to give a huge shout out to Don’s newly found Aunt & Uncle! If it wasn’t for them, I likely would have never gotten Don to agree to this!

I’m sure these stem from all the western style movies or shows I’ve seen. But, can you honestly say you aren’t curious to see what you would look like in a different time period?

These absolutely give you the opportunity to see that. Now – I’m not sure if back then I’d be a chubby bumpkin like I am here, but, who’s to say I wouldn’t have been?

Their cloth options didn’t “fit” but its a good thing I’m not the most shy person.  The fitting rooms were shared with others, but still semi – private. I was able to choose my clothes – not sure what I was going for. Attractive and rugged? Fancy and Hard? No Clue – either way – I VERY much enjoyed it and would love to do more of these.

I’ve always wondered what type of person I would have been in the past. This just lets me visualize it a bit better!

This was outside Reno in Virginia City. It was a nice small town with lots of little kitchy stores. Getting to meet Don’s family on his dad’s side was fantastic. Amazing people! It felt like we knew them for years! Can’t wait to meet up with them again!


 

a visit to Hoover Damn

This was one of those opportune moments. My husband had a work trip in Las Vegas. So I could go, we drove. This afforded us the opportunity to see a National Historic Landmark. While not something I would have gone out of my way to see, it was on the way to where we were going.

I’m really glad we stopped. I remember seeing videos of people dropping things and the draft just making them fly right back up.

I’m not sure what was more impressive about Hoover Damn. The size or height/depth of it or some of the art?

I absolutely love this statue(left). It reminds me of the Never Ending Story. But the style itself (art Deco? – I don’t know these things lol I’m guessing) I absolutely love.

It was interesting to read about the design, build and use of Hoover Damn. And likely more intriguing now since the water levels have dropped so much.

When we visited, the water level was 1088.95 Feet. It is currently 1044.28. (Source).

My husband was like a kid in a toy store looking at all the massing work that was done and the shear size of things. I could almost picture him as a little kid smashing work trucks together and playing with K’nex or an erector set. LOL

He is my very own large child! I love when he gets in awe about things.

Cirque du Soleil

Over 25 years of wishing I could see Cirque du Soleil live. A dream come true thanks to BroadPath and a certain senior manager who can’t possibly understand the gravity of my appreciation and complete awe that this finally came true.

I have been off and on crying and I’m pretty sure Don thinks I’m nuts.

Live singing and music and just completely amazing acrobatics and… and… and…

For years I had rented Cirque du Soleil from the local gas station down the road. Every couple of weeks I’d spend a couple dollars on a VHS (yes I said! VHS!) and watch Alegria. My all time favorite; and the one I’m most familiar with. If I owned the video or soundtrack on something other than digital media, I’m sure I would have worn them both out. I can hear the music play in my head and its been well over 25 years since I’ve rented it or seen it.

Something about it just makes me feel hopeful, in awe, free. I picture being stuck in a muddy gross pen with bad smells and then switching to a beautiful field with the sun and fresh air. I equate it to the scene in the sound of music when she starts singing – THE HILLLLLLLLLLLLLLS are alive….. with the sound of muuuuuuusic!. LOL – I know, I don’t care. This is my bucket list, my feelings. You feel what you want to. Its just what does it for me!

If I remember correctly – I wasn’t supposed to be taking pictures. But, I’ll be damned if I wasn’t going to get some after wanting to see them as long as I have.

The entire show was amazing. The work, effort and live singing and swinging – was absolutely astounding. You might think I’m crazy, or cant see what I see in the performance. It’s okay! Because this is MY bucket list. Go make your own:) the sky is the limit! You might not make them all – but don’t sell yourself short! I never imagined I’d EVER get to see this! – Next one I want to see is the Blue Man Group!

Pork Morengo

This one has always been a family favorite. Often served with rice, which can easily be replaced with cauli-rice or in this case, shredded cabbage.  It has an earthy taste. This is easily one of my favorite comfort foods.

We usually made this in a crock pot, however, this time, we made it in the Instant Pot and it turned out GREAT with a fraction of the time.

Ingredients:

  • 1.5 lbs Pork or Chicken
  • 1/4 c. Chopped Onion
  • 16 oz. Diced Tomatoes
  • 1 tsp Chicken Soup Base
  • 1 tsp Marjoram
  • 1 tsp Crushed Thyme
  • 1 tsp Salt
  • Dash of Pepper
  • Cabbage/Potatoes/Rice – Whatever you want your base to be.

Directions:

  1. Chop pork/Chicken into bite size pieces
  2. Place all ingredients into Instant Pot or crock pot
  3. Set Instant Pot to Meat/Stew on High  for 30 Minutes
    1. Release steam at 30 minutes.
  4. For Crock pot – Set on Med/High for 4-6 hours.
  5. Serve with cauli-rice or anything else you’d like

A Natural Hot Spring

We went camping with friends at Childs Power Plant up by the Verde Hot Springs and Fossil Creek. There were all kinds of incredible things in this small area. Fossil Creek will have to have its own post.

From where we were camping we had a short hike to get to the hot springs. We had to walk across the Verde River which was 100% not Verde (green for those that don’t speak spanish)

It was more a cloudy brown. Knowing I had to walk through very opaque water and not knowing the depth, whats in the water and so on I get those wonderful thoughts of ‘What is going to grab me, eat me, spit my bones out, drag me down the river. 

I survived! Surprise! Right? I mean – You are here reading this and I know you were waiting with baited breath to find out if I made it across – right? Of course you were!

My thoughts of becoming dinner or getting pulled down the river by the current or a floating body never happened.

We walked up to the area where the hot springs were and greeted with tons of graffiti. I loved it. It was all so very unique! Not just the steps and posts but the walls around the hot springs as well.

No – I did not get in. My feet got wet with the shallow parts – you could see the concrete floor inside the building portion of it. It was absolutely warm. Warmer than warm, but not hot.

These crazy people got in the big pool part of it (if you can call it big, or a pool, but it was deep!)

The Tallest guy in this group is 6’9 and he could not touch the bottom. My first thought is – What else is down there!

This was a REALLY neat experience and I highly recommend it to everyone. Its beautiful!

Stand Under a Waterfall

This probably comes from watching several movies where people hide behind or dive through a waterfall. Regardless, this was pretty awesome for me.  I’m not sure what I had expected, but I can tell you I was terrified and excited at the same time!

I’ve recently accepted that I have a fear of the unknown in water. But, before accepting this, I’d freak myself out while swimming. In order to get to the waterfall I had to jump into the water, swim from the very very shallow area across the deep part (where you could not see the bottom) over to the waterfall, where you can’t see in the water due to the aeration from the waterfall, to behind the waterfall, which – you can’t see either. I say this like it was a long distance to jump and go over the deep part……. It was not far… at all.

The whole time I’m swimming over thinking I have a calm exterior, panic is setting in. I ignore the monsters that are in the shadows watching me. Pass the deep part and get to the waterfall, reach out to climb up behind it hoping my hands only touch rock and nothing moves under my grip.

(Have I mentioned how exhausting being afraid of things in the water and things I can’t see  and……. and… is?  – Its really friggen exhausting. I WANT to see these things! If I could shut that off in my head – and just go for it, fully enjoy the moment! I would opt for this? Wheres the hypnotist? Sign me up!)

What is going to: reach up and eat me? Drag me under? Brush my leg? Get my legs tangled in it? Bite me? Sting me? Grab Me? Cut me? or – What dead thing am I going to step on and get stuck between my toes? 

YES! I have a very vivid imagination and YES those REALLY do go through my head, anytime I’m in water.  I don’t care how clear that water is. Unless its a very clean swimming pool – these are the thoughts I have constantly. I can reason myself endlessly, – but the fear is always there. 

I MADE IT! I sat there and made sure I didn’t touch anything else and that my feet weren’t dangling off the edge for something to get them. I conquered my fear enough to do something on my bucket list and to experience the great things that are behind a waterfall. 

Don’t get me wrong – I’d do this 100 more times as I know that depending on where the waterfall is and the depths behind it – its all going to be a new experience – every time.

After checking out this area, we walked down the path that had a rope swing. My crazy but had to try it. I say Crazy, but I do love the experience, I just hate that those things are in the back of my head. Its like those little devil/angel on each of my shoulder.

I USED THE ROPE SWING AND FELL IN!!! I was in the water, loved it, the water felt great, never seen anything living in the water, which helped, but I was happy to be where I was and I really enjoyed it.

I hope to get out of my head someday.

This outstanding experience was a few years before accepting my fear. So, queue the quick swimming and dodging anything that might touch me, or stepping on anything I can’t see clearly, or grabbing anything that I cant tell what it is or what is on it.

It was great – My apprehensions is definitely clear in my rope swing lol. I hope you enjoyed the story as much as I enjoyed reminiscing about it!

The original 1st was 7/29/17 but I did have another chance to duck under another waterfall. 

In Arizona, you can actually find all kinds of waterfalls, especially around and shortly after monsoon season. You do want to be careful as things can flash flood quickly. But the opportunity couldn’t be skipped to take a few more shots!  Below are a couple pictures from a spot in Madera Canyon. Just off one of the nature paths. Decent traffic but plenty of water to enjoy for all. Nothing super deep though.
